This seems like a straight forward one :)

1 tbsp soft light brown sugar
2 tbsp rice vinegar
3 tbsp rice wine or dry sherry
2 tbsp dark soy sauce
175 ml/6fl oz chicken stock
2 tbsp tomato purée
2 tbsp cornflour mixed with
2 tbsp water

You been past Stoke on train m8 ???

Possibly. En route to Newcastle I think. Possibly on the M1 by car as well, not sure.

Huge pottery kiln chimneys everywhere. Never actually been to the town though.

I suppose you'll be wanting a batter recipe for pork & prawns next? :D
