styles in tables and figures

We are having trouble changing the styles of figures and tables in a tech
manual. We just upgraded to Word 2007 and are confused about everything.
Any help would be appreciated.

Use the context-sensitive ribbon tab that displays when you select a picture
and a table, respectively.
