Styles and Formatting

I open a document and there are a long list items in the Styles and
Formatting list. How can I figure out how to control this area. I don't know
which of these are really needed for the document I've opened.
Also, when I cut/copy and paste into a document the font and size changes
unexplainedly...I set the default for documents to Arial...10, when I cut and
paste other fonts and sizes show up for the pasted content.

You need to learn about Styles. Now. Understanding styles is not optional
for a regular Word user. An analogy is that if you want to drive a car, you
really need to know what the lines on roads mean and whether you are
supposed to drive on the right or the left.

If you look at the "Include Text Tutorial" at
http://addbalance.com/word/download.htm you'll get a feel for how inserted
text is treated depending on styles, whether they already are in the
receiving document, and whether or not paragraph marks are included in the
pasted text.

You can always use Edit> Paste Special > Unformatted text.
