I want to change the path of the My Music icon in the Start Menu to take me
directly to the subfolder:

\My Music\iTunes\iTunes Music

How do I do that?
 
Right click the Icon and change the target information to reflect the new
path you want.
 
That is not an option. There is no place to edit the target information
with a right click of the icon.
