Was hoping this would be easy.
Have already done;

Tools"
"Language"
"Set Language..."
Removed tick from 'Do Not Check Spelling & grammar' next to languages.

How ever when word is exited, the changes do not save and Spell check has to
be re-enabled every time. Any ideas?

This setting is text-specific. It is like Bold or Italics. If you turn Bold
on for some text, do you expect it the text you type in your next document
to also be bold? I know that it feels like it should be something that is
application-wide, but it is not.

Somehow you have your template formatted to not check spelling or grammar.
Check your style definition for the Normal style. If it has this setting,
modify it and save the modification to your template.
