Shared Task - You do not own this task

I have an employee that I assign task to via shared taks. When I modify the
due date I get the message "You do not own this task. Your changes may be
overwritten by the task owner." I'm the person that created the task.
Shouldn't I have permission to modify it?

Not if you assigned it to someone else.

I like using the taks in Outlook and encourge my empoyees to do the same. As
a manager, is there a way with Outlook to manage other's taks?

If you have write permission on the other person's Tasks folder, you can
create the task in that folder directly and modify it later.
