Is there any way to use a laptop screen as a monitor for a normal PC?

I have a server, and I need an easy way to walk into the server room
and talk to it.

It's even easier. Don't walk over.
Install either an IP-type KVM (hardware) or VNC (software).

If the server runs Microsoft Windows Server, you can connect to it through
the network. Use the Remote Desktop client on the notebook (it's included in
Windows XP and available for download for previous version of Windows).

Not without a lot of home-brew engineering.

Now you could use a remote desktop program to manage the server, and
install it on a laptop. No walking needed.
