My inbox is an hour out from my sent items.
My sent items has the correct time whereas my inbox is incorrect.
How can this happen ? and how can I correct this behaviour ?

Have you verified that your time zone and DST settings in Windows have been
set correctly?

Yes, definitely. My time on my laptop is the correc time.
And in any case, why would the sent item be the correct time and inbox
incorrect time ?

The time consists of your time, your time zone and your DST settings. The
time for your received messages are calculated by the configured offsets of
your computer and the time that it got submitted by the sender (and thus
also his/her configured offsets). If your mail server re-stamps the time
somehow, then that must be configured correctly as well. You can contact
your mail admin or ISP to verify this.

The time of your Sent Items are set by your local set time and thus is
always correct for you ;-)
