When I send mails to friends / people their mail address comes up along with
the name in the To box. I don't want this to happen. How do I stop it?

That is by design and can't be changed.

Your recipient will not see it like that.

This is a cosmetic issue only for the message composer, and does not
affect how it will look when received by the recipient.

The only way to change that is to upgrade to Windows Live Mail:
