The reason many people are reluctant to open Documents is because they fear
malicious macro code (though elementary security provisions would take care
of that). Depending on the object of the exercise you could attach a PDF
copy which does not hold the same fears, but if you want the document as the
body of the message them you will have to work with html. Setting the web
view would give you a better idea of what is possible - and as I have
already indicated, pages are not supported, so there won't be any for the
text boxes to appear individually upon.
You have no control over how an e-mail message is viewed by the recipient.
Many people, myself included, view all messages as plain text.
