Send email for another user

My boss wants his assistant to be able to send email for him out of the
assistant's Outlook. He does not want the email to say "From xxx on behalf of
yyy". He also does not want his assistant to have access to his Inbox and
other folders. Is this possible?

Yes, that's possible. THe Exchange administrator must grant the assistant Send As access to the boss' mailbox.
