Send an email in Arial but received inTimes Roman

This is an odd one.
A user has set up Outlook to send all emails in 10pt Arial. This looks fine
when he composes emails but when they are sent the recipient receives it in
Times Roman!

This is on an internal Exchange 2000 Server system and PCs are using Outlook
2003 sp2. I cannot find any reason for this to happen and it appears to only
be this one user - as far as I know.

Messages are sent in html and open as html also.
Word is NOT the default editor on the sending PC in case that is of use.
