How do I view where the document is broken into sections? And how do I
protect only some of them.

Click the ¶ button to turn on nonprinting characters. Each section break
will appear as a dotted double line with the words "Section Break" and the
kind of break set in the middle... something like

Also, the section number is shown in the status bar at the bottom of the
window, so you can use the up and down arrows and watch for the section
number to change.

In Word 2003, click Tools > Protect Document to open the Document Protection
task pane (in Word 2007, click the Protect Document button in the Review tab
or the Developer tab of the ribbon). Check the box for "Allow only this type
of editing" and choose "Filling in forms" in the dropdown below it. If there
are multiple sections in the document, you'll see a blue link "Select
sections..." under the dropdown. Click that to open a dialog, and uncheck
any section you don't want to protect.
