In a much earlier version of Windows, one could initiate
the screen saver by hitting a control/(something). Is
there any way to do this in Windows XP?

Not really. There was no such keystroke in earlier versions either (that's not to say you couldn't make one). You can preview a screensaver (just by running the file). You can set a hotkey for any program by the properties in a shortcut. The shortcut must be on the desktop or start menu.

Note Preview is a preview and has no security.

Why not just lock your workstation using Ctrl+Alt+Del ?

You can't if the welcome screen is on. CAD brings up task manager.
