Is there any way to schedule a once a week Full Scan and Quick Scans the rest
of the week?

go to a command prompt and run \program files\windows defender\mpcmdrun.exe

Schedule it to your hearts content.

A full scan is both time consuming and resource intensive.

Well, that gave me the ability to run the scan of my choice from the command
prompt, but how does that help me schedule multiple scan types?

Create batch files with different parameters--you can choose signature
updates, quickscans, or fullscans.

Then use the Windows Scheduler--start, control panel, maintenance, scheduled
tasks--and schedule the scans according to whatever pattern you'd like.

This won't be reflected in the Windows Defender UI, but it will work.
