As a graphic? Insert Picture from scanner (or better still use your scanning
software to save the image to a file and insert that)
As text? Run the Office Document Imaging Tool and check the box 'prompt for
additional pages' from the 'Scan New Document' dialog. (better still use the
OCR software supplied with your scanner).
