Saving User Settings when replacing Domain Controller

Does anyone know how to save the user settings (Desktop,
documents, etc) for users on a workstation when the
domain controller is replaced? Everytime I upgrade a
domain controller with a new machine I have to rebuild
all of the settings for each user's workstations for the
user.
 
Use roaming profiles, and have more than one DC - make sure the profiles are
stored on a server you *aren't* rebuilding.

It is not economically practical to have a second DC at
each site. Each site is a small bookstore with one
workstation, one server and 3 dumb terminals. How do I
copy the SIDS from the old server to the new server?
