Typically applications either set their own screen modes or use the mode set
by the Desktop settings.
If you want to change the resolution of the desktop you would right-click
anywhere on the desktop (except over icons or windows) and select Properties
from the context menu that pops up. You'll then get a window with tabs
called "Display Properties". Select the Settings tab and set resolution for
whatever you want.
However, I suspect that this won't solve your problem. It sounds like you
have an old application that sets it's own graphics mode. If that's the
case, you'll have to set the mode thru the application - if it allows for
that.
