I could not get into outlook to create a pst file before restoring my pc. I
copied the microsoft office directory and the My Documents data. is there
any way of getting my contacts and email folders back?

Saving your Outlook data is as simply as saving your .pst file, which does not live in either of the locations you mention having saved. You don't need to open Outlook - simply locate the file (with Outlook closed of course) and copy it to a second hard drive, network drive, thumb drive, CD, etc.
