Request an unread Receipt - This would be an awesome feature on Outlook
email. If I could get get an alert indicating email unread after a chosen
number of days or hours as it would save me from following up in other ways

Makes absolutely no sense. Just who are you going to send this request that
you never want to respond? "No response to read reciept" makes sense as a
timer within Outlook when tracking e-mails for which you requested a read
receipt. Have you actually found read receipts to be of any value? Since
users often turn off this tracking feature (i.e., ignore all read receipt
requests) or spam or content filters remove the header so the recipient
never gets it, there can't be many of your recipients that are sending back
the read receipt that you requested.

Rather than use a flawed scheme to track when someone "reads" an e-mail
(which only means something opened it, not that the user actually read it),
simply ask the user to reply. Then using something like MapiLabs E-Mail
Followup (http://www.mapilab.com/outlook/email_followup/) to track if they
ever replied to you.
 
Wouldn't work when users can disable them, and I always do.
