We want to remove all Windows games from every computer
in our organization, and would like to use a group policy
to unistall them. We can not find any information on how
to do this. Can you help??

Thanks

Not sure about removing them, but you can restrict access to them from

user config/admin templates/system - Don't run specific Windows apps

Just add sol.exe and any other .exe you want to restrict to that list.
This is how we do it anyway. You could go the reverse and use the 'run
only apps' just above it.
