Removed Outlook Profile by mistake

Have a customer that has removed her only Outlook Profile. When she goes to
access Outlook it is asking to create a new profile. Is there anyway to
access or restore her old profile?

You will probably have to recreate her profile. Does she use a PST?

I'm going to guess she has a PST file, I can have her check. If I recreate
her profile will it bring back her messages, address book etc...

If you add the origonal pst to this new profile, and designate it as the
default

Not unless you have a backup of the Windows registry to restore.
