I got a new server and put Windows Server 2003 on it. I
wanted to make my old 2000 Advanced Server a client
machine, but REALLY didn't want to wipe out everything on
it, so I simply installed XP Pro over the top. Now both
OS's are available when I boot up and I want to remove
the Windows 2000 Advanced Server OS, not just from the
boot directory, but from the system. How can I do this?

One cannot install Windows XP Pro over a server
operating system. What you need to do now is to
perform a clean install.

I selected the clean install method (not the upgrade)
when I installed XP Pro. It installed just fine and
works just fine. I just need to remove the Windows 2000
Server OS.

If you performed an actual clean install, you would have
reformatted your drive in the process. All you did was
managed to install Windows XP in the same partition
Windows 2000 Advanced Server OS is installed in.
You need to start over and perform the installation of
Windows XP correctly.
