Remove the user name from the exchange server settings in Outlook

How do you remove the user name from the Outlook exchange server settings in
2003? This field along with the exchange server field are grayed out and
will not allow you to remove the information.

I am making a new image and need to omit the user name from this setting so
I can make the default user profile.

You can't create a default mail profile that way. Instead, you should create a .prf with the desired settings (with the Custom Installation Wizard or Custom Maintenance Wizard tools in the Office Resource Kit) and deploy it and the necessary registry values for Outlook to invoke it before creating the image.
