Found this post while experiencing the same problem. Anando [MS-MVP] is
right but you need to do one more step. Deleting the default.rdp file
didn't work on its own. I had to recreate my server*.rdp files and set
the resolutions to 1280x1024 before first saving it. Modifying existing
..rdp files doesn't apppear to do the job.
I didn't get to test it, but I think that even without deleting
default.rdp, as long as you create new .rdp files from scratch and set
the resolution to what you want, it should work.
Below is the post I wrote before I tried to create a new .rdp
connection after deleting default.rdp. Hopefully it will pop up in
other users searches.

I know exactly what Tmartinac is talking about as I am experiencing the
same problem (thats how I found this post).
My screen is 1920x 1200. I setup server.rdp to launch at 1280x1024.
When I launch the connection the window that opens is (estimated to be)
1152x 864 and has vertical and horizontal scroll bars. I have to expand
the window by dragging out the bottom right corner or clicking on the
full screen box to get the window to be the full 1280x1024. The
1152x864 automatic window size resolution is a pain because, among
other things, it cuts off the bottom task bar and the real scroll bar
on the right. The only way to not have to expand the window is to
actually set the connection resolution to 1152x864. While this is a fix
it is far from optimal when viewing remote servers and a waste of
desktop space.
I just tried deleting the default.rdp in the my documents folder and
that didn't change anything.
