At a small elementary school...

We are setting up a pc to run DVDs, powerpoints, etc on an hallway
monitor. The problem is, the computer itself is going to be a little
difficult to get to, so we were initially thinking that we would just
use remote desktop to make our changes and updates. Now that this
system almost ready to go, it occurs to me that logging in via remote
desktop will log off the local user - and the hallway monitor will
revert back to the login screen.

Is there a way around this - some method by which the computer can be
controlled remotely, then restore the display to the computer's
monitor - also remotely? VNC comes to mind first... but I wanted to
make sure there weren't better options available.

Yes, VNC is a good option.
