Relocate Document & Settings Folder & OutLook Email files

Is there a way that Windows XP Pro can be modified so
that the Document & Settings folder and/or OutLook Email
files can be located on a HDD different from where the
Windows XP system files reside ? That is, I want to have
my data files (my Document & Settings and Emails on a
different hard drive apart from the system files drive)
