Reading Full Headers from Outlook or other email programs/addons

Apparently an email has quite a bit of information in it. When you look at
all the header information, there seems to be quite a bit of imformation. Is
there anyway for Outlook or any other email program/addons to read the header
information, and then route the email based on certian criteria?

Outlook and most other mail programs I've used have rules that can examine
header information.
