The Microsoft webpage has misled you (as it has many others) into
posting this Publisher question in a newsgroup for a different
program, Microsoft Access. Please repost in a Publisher newsgroup -
scroll down the list of subject areas.
In short, though, you'll need to use "Optical Character Recognition"
software (which should have come with your scanner) to convert the
visual image of text into editable ASCII characters.
