I know that I have to protect my document in order for checkboxes to be
functional. The problem is, I can't figure out how to protect a document.
And, do I have to do it prior to adding all of the content to the document?

You protect the document by clicking the lock icon on the Forms
toolbar. Alternatively, you can do it by opening the Tools > Protect
Document dialog (or task pane in Word 2002/2003), selecting "protect
for forms", and clicking OK or "Start protecting".

You do this last, just before the final Save. If you protect the
document first, you won't be able to add any more content except
inside the form fields. Then you'd just have to unprotect (click the
lock icon again), make your additions, and reprotect.
