I have Windows XP Pro SP2 running Office 2003. I have 6 workstations and wll
be adding 4-6 user accounts. I am not using roaming profiles. Is there a
way to deploy an Outlook email profile to the all the workstations or do I
have to do to each station and set their email profile up?

That depends on two key details you didn't mention:

1) Will each user be logging onto the machine with their own Windows login?

2) Does each user's Windows login match their mail account?

1) Will each user be logging onto the machine with their own Windows login?
A: Yes, they will be using a Domain Account.

2) Does each user's Windows login match their mail account?
A: Login is "JDoe" and email address would be "(e-mail address removed)". They
will need to add a shared mailbox to their list of accounts, but that isn't a
requirement for this. If it's possible, great, but if not it's not the end
of the world.

Microsoft uses text files with a .prf extension and a highly structured format to provide information to OUtlook that enables Outlook to create or modify a mail profile. You can create such .prf files with the Custom Installation Wizard or Custom Maintenance Wizard tools in the Office Resource Kit. You won't be able to use a .prf file to add a shared Exchange mailbox, though. See http://www.slipstick.com/addins/olroam.htm#tools for other tools that may be able to help with that.
