is there any way of selecting an option so that a
document will print in black ink only when the installed
printer is a colour printer which has a FULL black ink
cartridge and an EMPTY colour cartridge? i.e. i want to
print a document using only black ink, which i am
normally able to do, but now that the magenta cartridge
has run out, it will not print at all, insisting i have
to change the cartridges even though i only want to print
in black and the black cartridge is full.

Nothing really to do with the operating system. Try asking in a group
specific to your application.

There is usually an option to print in black and white under your printer's
properties.
