How do I find out what my POP3/IMAP server is and what do I write in the box?

Your ISP would have that information. Visit their Website and they should
have
instructions on how to set up a mail client. It would probably be in the
Tech
Support section.

It depends on who your email provider is. Most users choose their
internet provider as their email provider, since most internet accounts
include one or more email accounts. Ask your email provider for
their instructions on how to set up to use their email servers, which
should include the correct server names and any other details needed.
If they haven't written instructions for Windows Mail yet, their
instructions for Outlook Express should also work under Windows
Mail as long as they don't call for the HTTP protocol. The instructions
are probably somewhere on their web server. Or, you could tell us
who your email provider is and see if anyone here already knows
where to find their instructions.
