I want to view paragraph marks and tabs in my documents, but not spaces. How
can I do that? It seems that there is only one button and it turns on all
three.

In case of Word 2003 or older:
Select Tools > Options > View tab. In the "Formatting marks" group, you can
turn on/off the different formatting marks individually.

The icon in the Standard toolbar corresponds to the "All" button".

For further details about formatting marks, see this article:

In Word 2007, press the Office button, select Word Options (at the bottom)
and then click on the Display tab at the left to get checkboxes for each of
the elements you wish to display (or not)
