You need to create the page number prefix in a way that Word understands.
If you examine the page number itself, you'll probably find that someone has
simply typed the "A-" portion in front of the page number field. You want the
field to include the prefix. To do that you have to define the page number
format to include the prefix.
Do your chapters have page number prefixes: 1-1, 1-2, etc? If you open one
of your chapters (one that's appearing in the TOC the way you want) open the
footer, then click the Format Page Number button in the Header and Footer
toolbar, you may see that the Include Chapter Number check box is checked,
and that the number for Heading 1 is being used as a prefix.
For your appendix, you'll need to define a built-in heading style (Heading 1
through 9) to use for your Appendix title. That style will have to have
outline numbering assigned to it. That's where you specify that it's an A
rather than a 1 etc.
Then you can define your appendix page number format to include a prefix
that's the number (letter) of your appendix heading style.
Has to be a built-in heading style, and has to be outline numbering AFAIK.

If you can't abide this process, you can also use SEQ fields to number your
appendix titles and create a prefix for your page numbers. You have to code
the TOC and Index fields a bit differently to recognize SEQ prefixes, but
it's all in the Help topic for the TOC and Index fields.
