Go to Tools / Options

Click on the Signatures tab> Check Don't Add signatures

to replies and forwards>ok
or, you can simply remove the signature there.

Go to Tools | Accounts, and double-click on the E-mail account.
Put whatever you want to appear in the "Name" field.

You didn't state 'where' your name is appearing, however..........

You either have a signature configured for that account, in which case it
can be removed by going to Tools/Options/Sinatures tab. Highlight the
accounts signature and select the Remove button. (or simply change the
signature in the bottom dialog box)

Or, you have your name entered in the account configuration. Open
Tools/Accounts/Email tab. Click the email account you wish to change and
select the Properties button. In the General tab, under User
Information/Name box, delete your name there and either type another name or
simply place a null character there. (Like an Asterisk or Dash) There must
be at least one typed character in that box.
