Outlook Email user-defined field - how do I INPUT to it?

I have createdv a user defined field in an email folder, but I can't see how
to now type (sent for signatures or whatever) into it.

In fact, how do I input to any of the fields?
I added the standard field "Signed By" in the hope that I could use that,
but can't work out how to enter text into it.

Enable in cell editing and you can type in most fields in the table view -
customize view, other settings button.
