Would you recommend configuring your default outlook profile w/RPC over HTTP
or creating two and why?

Default profile because if it is properly configured, the user will get a
RPC/TCPIP connection when on the corporate network and RPC/HTTPS when not.
(Note: I've noticed that it takes about minute or two before Outlook will
fail over to the other protocol.)

Hold down the CTRL key and click on the outlook icon in the system tray
(next to clock). Choose connection status to see which protocol Outlook is
using.

Another way to do this is by starting Outlook with the /rpcdiag switch.

When introducing RPC over HTTPs as a possible alternative to a VPN solution
(for use by that population of users who only need access to email) and as a
result of the limitation of providing this feature for all or none, there is
the perception that
there may be some risk.
