Outlook calendar

I would like to share my outlook calendar with a number of employees. I
would like them to be able to book appointments and delete their own
appointments. However, I don't want one employee to have access to delete
another employees appointment. Is this possible?

You'd have to give them Author permissions then;
Write: Create items, Edit own
Delete: Own
