I am having the same issue, some of my birthdays and events are being spread
out over two days. Any help would be appreciated.

Check your daylight savings time settings under Tools->options->calendar
options in Outlook as well as your Regional Settings in Windows Control
Panel.

I have always had this problem as well - and sometimes Outlook will change my
meeting times (which is very bad for me). I live in Arizona - it is set as
the time in both Outlook 2007 (and before in Outlook 2003) and on my Windows
time zone as well. Birthdays are almost always spread over 2 days and I get
a reminder at midnight or some such other agonizing time. The fix offered
below does not work!!!
