Outlook 2007 on Server 2008

First, I'm new to Server 2008 so that is probably the issue, but what I am
experience is the following:

Logged into server as domain admin
Added domain users as local admins
Office 2007 installed without errors
Logged in as domain user
Launched Outlook 2007, setup ok
Appointments popped up but I cannot do anything with the window. Clicking
any button has no affect. Task manager shows as running

I logged off and then on as the domain admin and deleted the users profile.
I repeated the process and all appeared to have been fine again. I tried
sending an email to this user and he receives it but clicking on "Reply" has
no affect like above.

I am not Server 2008 expert but this may have something to do with security
enhancements in Server 2008.

Also, why would you ever use a server as workstation and compromise the
integrity of the server by installing applications such as Outlook and then
further compromising the server and all it's data by logging in and running
the apps as a domain admin.
