Outlook 2007 Can't find Exchange Server

When I couldn't find the Mail icon in Vista64bit I launched Outlook and
botched an Exchange setup.
Now I am locked in a loop of not being able to change exchange settings, and
Outlook simply closes down.
How can I delete this profile and start over?

Control Panel, I imagine. Is there a Mail icon?

No there is no Mail icon in Control panel - thus the problem.
I installed Vista into a VMWare session so going to reinstall and setup a
pop account first. If successful i'll try and add an Exchange account
afterwards.

There must be some way in Vista to configure a mail profile with Outlook
installed.
