Outlook 2003 spell checker in multiple countries

I’m using Word as my email editor in Outlook 2003, with red underlining spell
check turned on. The spell check works correctly on mails I originate, but
when I reply to mails originating in the US, it spell checks my reply using
the US dictionary – not the UK dictionary I have set in my Word preferences.
Does anyone know if there’s a way to get Word to check my reply using the UK
dictionary?

Sorry for needing to be spoon-fed, but where can I find the disable automatic
language detection tick box? Is this an option within Outlook or Office 2003
tools?
