All my users are using Outlook 2003. What protocol does Outlook use to
communicate with the Exchange server? Will it ever use RCP?

Well, are you actually having a problem or trying to make something work?
Or is this just a curiousity question?

The Exchange Server version is going to affect this as much as the Outlook
version.

It's also a mildly confusing question. RPC (not RCP) isn't actually a
protocol. It runs at the Application layer. It uses whatever network
protocol it can use to talk to the server, TCP/IP is most likely.
