Outlook 2003 - Print a sent email with BCC showing

How can I print my own sent email (that I sent) with the BCC's showing. This
is for documentation.

I don't believe that's possible except by using a screen shot.
 
It is possible to do if it is sent by me, which it was. But I'm just not
exactly sure how to do it.

No, it's not. You cannot print the Bcc field in Outlook 2003.
