Is there any way to disable this feature globally across the Inbox and Sent
Items ???

You can change the Messages view and it will change for all folders that are
still in the default Messages View. It is a bit buggy but every folder it
works for is one right? ;-) You can also define your own (ungrouped) view
and enable the Show Views in Navigation Pane option so you can easily change
it when you first use that folder
