Outlook 2003 "From" field in a new message

What is the purpose of being able to make a new message appear to come from
someone other than you besides spoofing? That is; with Outlook editor
enabled, from a new message select View then From field.
 
We use it for two purposes:

1. Many admin staff use it to send messages on behalf of the person they
support, if that person is traveling or otherwise disconnected from email.

2. I work in tech support and I have rights to send msgs From a mailbox
called (e.g.) (e-mail address removed), rather than from me.
 
Along with kepaha's excellent reasons, if you have two email accounts you
can enter your second address in the from field to make it appear from the
second account without actually creating an account in Outlook.

You should be able to disable the menu button that displays it - see the ORK
tools. Note, however, that unless the Admin gives someone 'send as' rights,
the message will say 'sent on behalf of xxxx' when the from field is used,
so the spoofer can't get too far without getting caught. Plus the sender
needs the proper delegate permissions in order to do it...
