Opinion buttons for none Exchange Server account users?

I'd like to carry out an E-Survey, and I tried using the opinion buttons to
do so, however it appears that only other MS Outlook users can view and click
these buttons.

Does anyone know of a way I can send out some sort of survey to other email
account types, such as service provider extensions
([email protected]) and view the results without having to
manually read every response I get? (I expect around 300)

Are there any types of coding I can add into the body of the email that
could include several buttons for people to click on? And how could I
correlate this information at my end?

Any buttons you use require Outlook. I'd setup a website with a backend
database for something like this. For a low use survey you can try using
this site:
http://www.surveymonkey.com
 
To add to Vince's suggestion and if you are using Windows Server 2003 then
Windows SharePoint Services can do this also.
