Odd characters appearing in emails

I am using Outlook 2003. So far this has happened twice today - I get a
response to an email I sent and it has odd characters in it.
Here is what I sent:
Moving on – any idea what you & your family are doing for Thanksgiving?

When I got the reply back - my original message looks like this:
Moving on – any idea what you & your family are doing for Thanksgiving?

What is up with that?
