Numbering in a form template...

I have a form template...and I set it for auto-numbering so each time the
"Enter" is hit it automatically gives the next number (ie : 1., 2., 3., etc).
The problem is, if you want a subset of information...for instance 1.a. In a
normal Word document that is not protected, I would simply hit tab and it
would turn the 1. into a. Is there a way to do this in a locked template!?

Use an unprotected section for this. Note that if you are using Word 2007,
you are only allowed to apply styles set as Quick Styles. So you may want to
set up a multilevel list using styles for each level, and then set these
styles as Quick Styles, before protecting the document.
